My favourite Michelin Restaurants
Restaurants vary over time, and consequently it is difficult to objectively rank restaurants precisely within a category, to say that such and such a restaurant is the 17th best in the world rather than the 16th or the 18th. There is also a matter of personal taste: I have a slight preference for classical over ultra-modern cooking, for example, and someone else may quite legitimately feel the opposite. On www.andyhayler.com there is a “top restaurants” section that shows my personal choices of the group of restaurants I rate most highly.
The cooking of Joel Robuchon in Paris before he retired was perhaps the most consistently superb food that I have eaten, but I have had many fabulous meals, and superb individual dishes at many other restaurants, as outlined on the pages of this site. I would encourage you to sample as many as you are able to, and make up your own mind.
